1 head of cos lettuce, leaves separated
2 The Bean & Beet by Strong Roots
2 roasted red peppers diced; from a jar
1 large ripe avocado
1 tbsp fresh lime juice
1 - 2 tbsp of dairy free yogurt
Salt and pepper to taste
Lime wedges, nachos, and vegan mayo to serve
method (tick as you go)
Cook burgers according to packet instructions using the desired method.
Meanwhile blend avocado, lime juice and dairy-free yogurt together in a jug until smooth.
Season to taste with salt and pepper.
Once cooked allow to cool for a few minutes; crumble the burgers into a bowl using your hands.
Mix the crumbled Bean & Beat with roasted red pepper. Place into large lettuce leaves.
Top with avocado cream, vegan mayo and garnish with nachos and some wedges of lime on the side for a final pop of freshness.
