1 bag Strong Roots Spinach Bites
1 jar fire-roasted peppers
2 cloves of garlic- finely minced. Like garlic? 1-2 more cloves
3/4 cup chopped curly parsley
1/3 cup olive oil
3 tbs balsamic vinegar
1/2 teaspoon salt
method (tick as you go)
Drain Peppers, but do not rinse. Slice peppers into 1 cm strips and place in a medium bowl.
Add garlic, Italian parsley, olive oil, balsamic, and salt, toss gently until combined. Let sit 30-60 minutes so flavors can marinate.
While peppers are mingling, bake Spinach Bites as per package instructions.
Serve warm alongside peppers for the perfect appetizer or dinner side dish.
*A high-quality olive oil will congeal in the fridge. So keep these babies on the counter until you’re ready to serve. If you make them ahead of time, don’t add the olive oil until an hour before serving and keep on the counter.
