Kale & Quinoa Burger Grilled Cheese Sandwich

Plain grilled cheese sandwiches are a thing of the past. This recipe pairs our Kale & Quinoa Burger with vegan chive cream cheese, tomatoes, and spinach pressed between buttery crispy brioche. You’ll never look at a simple grilled cheese the same way!

ingredients

2 Strong Roots Kale & Quinoa Burger Patties
4 slices brioche bread
2 tbs vegan butter - 1 tbs per sandwich
4 tbs Chive vegan cream cheese - 1 tbs per sandwich
2 tsp olive oil
2 vine tomatoes - cut into 1 cm slices, grilled
4 cups spinach - wilted/sauteed

method (tick as you go)

Preheat oven to 400F.

Start heating a fry pan on high heat with 1tsp of olive oil.

Slice tomatoes into 1 cm thick slices. Place slices in the pan and fry on high heat until both sides are golden brown - approx 2-3 minutes per side.

Add the remaining 1 tsp oil to the pan and wilt spinach. Remove from pan and set aside.

Bake two Kale & Quinoa Burger Patties as per instructions on the package and start building your sandwiches.

Couple bread slices to make 2 sandwiches. Generously butter the outsides of each sandwich. Open sandwiches and smear 1 tbs cream cheese on the inside of each slice.

Then build sandwich by layering 1 Kale & Quinoa patty, 2 slices of tomato, and top with wilted spinach. Close sandwiches butter on the outside and heat your pan on med-low heat. When warm place your sandwiches in the pan.

Cook both sides until golden brown and serve with your favorite condiment.
