Look at this double stacked Beetroot & Bean Burger with melted cheese, and caramelized onions on top of a brioche bun. This is the perfect dish to show off your cooking skills at any BBQ!
4 Strong Roots Beetroot & Bean Burger
2 tbs vegetable oil
2 medium onions - thinly sliced
2 teaspoon sugar
2 tbs dijon mustard
4 Brioche Buns
4 slices vegan gruyere cheese
4 tbs vegan mayonnaise
1 tbs orange zest
3 cups baby arugula
method (tick as you go)
In a small bowl mix together vegan mayonnaise and orange zest. Set aside and get burger fixings ready.
Heat 2 tablespoons of the vegetable oil in a large frying pan over medium-high heat. Add the sliced onions and cook, stirring occasionally, until the onions are soft and beginning to brown, about 8-10 minutes.
Reduce the heat to medium, add the sugar, dijon mustard, and 1/4 teaspoon of salt and continue to cook until the onions have caramelized, about 15 minutes.
Heat grill to medium-high heat and grill Beet Beetroot & Bean Burgers on both sides for approx 6-8 minutes per side.
For the last minute top with cheese and melt while you lightly toast brioche buns.
To assemble generously smear each side with ½ tbs orange aioli. Place 1 patty on the bottom bun, top with caramelized onions arugula, top bun and enjoy!
