Cauliflower Hash Brown Bruschetta

Who needs bread when you have Cauliflower Hashbrowns?

ingredients

1 tomato, diced
½  bunch fresh basil, chiffonade
1 teaspoon olive oil
3 cloves of garlic, minced
Juice from ½ lemon
Drop of honey (just a touch, you barely need any)
Kosher salt and freshly ground black pepper to taste

Preheat the oven to 400F. Place cauliflower hash browns on a sheet tray and into the oven and cook 15-17 minutes, flipping once halfway through. Remove sheet tray from oven.

Make the tomato topping. Combine the diced tomatoes, basil, garlic, olive oil, lemon juice, and honey. Mix gently and taste, adjusting with salt and pepper if necessary.
