3 - 4 Strong Roots Veggie Fingers
2 tbsp vegan mayo
1 tbsp fresh dill
½ a mug frozen peas, thawed
1 tbsp fresh mint 
1 tsp lemon juice
Salt to taste
2 baby gem lettuce leaves, finely chopped
2 slices of your favourite fresh bread

method (tick as you go)

Put veggie fingers on to cook according to packet instructions.

Mash or blend together the peas, fresh mint, lemon juice, and a pinch or two of salt to taste.

Mix together the vegan mayo and fresh dill.

Spread peas over one slice of bread, lay lettuce on top, followed by the mayo and finally the cooked veggie fingers.

Slather a thin layer of mayo or vegan butter on the other slice of bread. Top sandwich. Dig in. Have paper towels handy, it’s a deliciously messy one.
