Peanut butter toast is not just for breakfast…and these toasts topped with The Pumpkin & Spinach are definitely not just for lunch.
For a quick peanut butter satay spread:
60g peanut butter
10g maple syrup or honey
1 tbsp soy sauce or tamari for gluten free
½ tbsp curry powder
method (tick as you go)
Preheat your oven to 200C (400F).
Cook burgers according to packet instructions.
Mix together all ingredients in a bowl
Spread on your favourite sourdough bread, toasted.
Top with The Pumpkin & Spinach, some pickled red onion, spinach leaves and a few pomegranate arils for a pop of crunchy freshness.
