Nachos for breakfast? Why not? This recipe will be the breakfast that is asked for time and time again. With these nachos are no chips required and are loaded with beans, guacamole, and sour crème to create and for the perfect game-changing Sunday Brunch!
- 7 -10 Sweet Potato Hash Browns
- ½ a can of black beans, drained and rinsed well
- ¼ tsp each of salt, cumin, coriander, chili powder or cayenne pepper
- 1 large tomato, deseeded and diced
- 1 tbsp chopped red onion
- 1 ripe avocado
- ½ tbsp lime juice
2 - 3 dairy free crème fraîche or sour cream
Salt all round to taste

Cook hash browns according to packet instructions
Meanwhile, add beans to a pot with salt, cumin, coriander and chili powder, and heat through.
Mix tomato and onion in a bowl with a dash of lemon juice. Season with salt and pepper.
Mix avocado and lime juice and as with the tomatoes, season with salt and pepper to taste.
Assemble cooked hash browns with beans, mashed avocado, and crème fraîche and dig in!
Bonus tip: you can also add a dash of hot sauce and vegan cheese on top if desired.
