A mouth watering, tummy warming recipe for cold winter mornings! Start your day right with this delicious Garlic Sweet Potato Hash Breakfast.
1 bag of Strong Roots Roasted Garlic Sweet Potato Chunks.
1 red onion
1 tsp Coconut oil
100g cherry tomatoes
1 red pepper
3 spring onions
¼ tsp salt & pepper
Juice of one lime
1 bunch or fresh coriander
method (tick as you go)
Pour the Garlic Roasted Sweet Potato Chunks on an oven tray and bake in oven as per cooking instructions.
In a pan heat the coconut oil and fry the onions, peppers and tomatoes for approx. 5 minutes.
When sweet potato chunks are done remove and add to pan. Season and add spring onion, lime and coriander.
Add to serving dish and serve hot.
