Soba Noodle Salad with Asian Style Green Vegetables and a Chilli Soy Dressing

1 bag of STRONG ROOTS Winter Green Vegetables
400g soba noodles
1 cup of edamame beans, cooked and shelled
1 mild red chilli, very finely chopped
1 tbsp mirin/rice vinegar
1 tbsp soy sauce
1 tbsp sesame seeds, toasted
Salt & freshly ground black pepper

method (tick as you go)


Preheat oven to 180 ̊ C and cook Winter Green Vegetables and soba noodles as per packet instructions.


Drain noodles and set aside.


To assemble: add noodles, Winter Green Vegetables, beans, chilli to a bowl along with mirin and soy sauce, toss well to coat.


Turn out onto a serving platter and sprinkle with sesame seeds and season with salt and freshly ground black pepper.
