This has to be one of the easiest and most delicious recipes that our brand ambassador Roz Purcell has created for us yet. It is couldn’t be more simple, add all ingredients to a baking tray and have a colourful, nutritious dinner ready in twenty-five minutes. 1 x pack Strong Roots Beetroot & Bean Burgers
1 x pack Strong Roots Garlic Roasted Sweet Potato
2 courgettes washed and diced into small chunks
300g cherry tomatoes left whole or diced, depending on your preference
1 tbsp oil
3/4 tbsp sea salt
1/2 tbsp fresh ground pepper
1 X tin of mixed beans or lentils washed, rinsed and drained
method (tick as you go)
Preheat the oven to 200°C, on a flat large baking tray, add the Beetroot & Bean burgers. To the other side add the Garlic Roasted Sweet Potato Chunks.
With the room left, toss on the courgette and tomatoes - drizzle the oil, salt and pepper over the courgette and tomato.
Bake for 25 minutes.
Toss/ flip everything half-way through.
Once finished cut the burger into quarters.
Stir the vegetables into the lentils/beans and top with the quartered burgers and serve immediately or let cool fully before portioning into sections for meal prep.
