Pumpkin & Burger Salad with Char-Grilled Corn and a Lime & Chili Dressing

In this recipe we have created a healthy burrito bowl with smokey char-grilled corn, beans and rice, topped with a delicious zingy dressing. ingredients

4 STRONG ROOTS Pumpkin & Spinach Burgers
85g brown rice, uncooked
3 tablespoons of black beans
10 cherry tomatoes, halved
80g broad beans
2 corn on the cob
3 scallions chopped
1 tsp of chopped coriander

Lime & Chili Dressing
Juice of 2 limes
3 tablespoons olive oil
1 clove of garlic, minced
1/2 chili, diced
1/2 tsp harissa paste
Salt & pepper

method (tick as you go)

Pre-heat the BBQ to a medium high heat.

Boil a large pot of water. Add the corn on the cob cook for 5 minutes, Finish on the BBQ for the perfect charred effect and smokey flavour.

Add the burger to the BBQ and cook for 5 minutes on both sides or until crispy.

Slice off the corn kernels with a sharp knife into a bowl. Set the Pumpkin and Spinach burgers to the side and cut into quarters.

To assemble, place the cooked brown rice, black beans, cherry tomatoes and scallions into a large bowl along with the char-grilled corn and broad beans.

Add the STRONG ROOTS Pumpkin & Spinach Burgers.

Whisk the dressing ingredients in a separate bowl and add to the salad.

Garnish with fresh, chopped coriander.
