1 bag of Strong Roots Proper Chips
1 can blackbeans, drained and rinsed well
½ mug of corn; canned or frozen, if using frozen thaw out in advance
1 small red onion diced
1 mug of tomatoes diced
2 -4 tbsp natural yogurt, dairy free if desired
1 large avocado diced
Fresh chilis thinly sliced
Handful of fresh coriander
Lime wedges to serve
method (tick as you go)
Preheat your oven to 200C (400F).
Place proper chips onto a baking tray and cook for 25 minutes.
Remove from the oven and layer up with blackbeans, corn, red onion and tomatoes. Return to the oven for 5 more minutes to heat through.
Top with diced avocado, dollops of yogurt, slices of fresh chili and as much or as little fresh coriander as your heart desires.
Serve with wedges of lime and some coarse sea salt for people to season as per their individual preference.
