1/2 a bag of STRONG ROOTS Garlic Roasted Sweet Potatoes
150g of vegan goats cheese
Box of frozen filo pastry
3 large red onions, chopped
2 cloves of garlic, chopped
5 tbsp of balsamic vinegar
1 tbsp of maple syrup
1 tbsp of olive oil
Salt & pepper
method (tick as you go)
Preheat the oven to 200°C.
Place STRONG ROOTS Garlic Roasted Potatoes on a baking tray and cook as per instructions on the bag.
Slice onions, add to the pan with the olive oil, garlic and thyme. Gently soften over a low heat until translucent. When sufficiently cooked add maple syrup and vinegar, reduce to desired consistency.
On a separate baking tray layer the filo pasty.
Remove the Roasted Garlic Sweet Potatoes from the oven after 15 minutes.
Cover the filo pastry with onion marmalade, goats cheese, sweet potatoes and thyme.
Place the tart in the oven for 20 minutes.
Remove when browned and serve with a simple side salad
