A hearty, warm bowl of chili and Garlic Roasted Sweet Potato Chunks which feel like a hug.
1 bag Roasted Garlic Sweet Potato Chunks
2 cloves garlic
1 medium onion
1tsp coconut oil
1 tin chill beans
1 tin tomatoes
Plant based sour cream
Sprinkle salt & pepper
method (tick as you go)
Add the garlic chunks to a tray and cook as per cooking instructions.
Finely chop the garlic and onion and add to heated pan with the coconut oil. Cook for 5 minutes.
Add the tins of chilli beans and tomatoes to the saucepan. Season to preferred liking and simmer for 10-15 minutes.
Remove the Sweet Potato Chunks from the oven and stir into the chilli bean.
Serve with a dollop of the sour cream and a sprinkle of fresh herbs.
