Broccoli & Purple Carrot ‘Meatballs’ With Pesto Courgetti

We pair courgetti with the earthy taste of pesto and our amazing Broccoli & Purple Carrot Bites with a fresh tomato sauce. This will be your new weekly staple! Bellissimo!

1 Bag of STRONG ROOTS Broccoli & Purple Carrot Bites
400g of courgetti
3 tbsp of vegan pesto

Garlic and Chili Tomato Sauce
1 tin of chopped tomatoes
1 red chili, diced
2 cloves of garlic, minced
Basil, chopped
1 tbsp of olive oil
Salt & pepper

method (tick as you go)


Preheat the oven to 200°C.


Place STRONG ROOTS Broccoli and Purple Carrot Bites on a baking tray and cook as per instructions on the bag.


In a pan heat garlic, chili and oil until they soften over a low heat. When softened add the tin of chopped tomatoes, increase the heat and reduce by half. Season to taste.


With 5 minutes to go, heat pesto in a pan and add in the coutgetti, cook to al dente.


Remove STRONG ROOTS from the oven


Assemble on plate by stacking the Bites on the pesto courgetti and serving with tomato sauce
