A yogurt and flour pizza base made using equal amounts of vegan coconut yogurt and self–raising flour. Mixed, rolled and cooked in a pan for a couple of minutes, we then finished it off in the oven for a few minutes more and topped it off with our favourite hummus.
Our little Broccoli & Purple Carrot Bites are delicious on top along with some ribbons of courgette for an extra veggie hit.
Made with
ingredients
130g plain flour or plain spelt flour
110g unsweetened dairy free yogurt
2 tsp baking powder
Generous pinch of salt
½ tbsp olive oil
3 - 4 tbsp hummus
6 Strong Roots brocolli bites, cooked and sliced in half
Small handful of courgette ribbons, created with a standard vegetable peeler
1 tbsp toasted pine nuts
Fresh dill and basil to serve
method (tick as you go)
Preheat your oven to 200C (400F).
Cook Broccoli & Purple Carrot Bites according to packet instructions.
Mix together flour and yogurt with salt and baking powder in a bowl.
Heat a 10 to 12 inch pan over a high heat with olive oil.
Place dough out onto a floured surface and use your hands to press it out into about a 10 inch round or you can create an oval if your pan is big enough. It doesn’t need to be exact.
Place dough into your prepared pan and cook for a couple of minutes; until it bubbles up!
Place into the oven to cook for a further 5 minutes.
You can place the hummus on top and heat in the oven for 5 minutes or serve cool on top of the warm crust.
Lay cooked bites on top, courgette ribbons, pine and fresh herbs.
Drizzle with a little olive oil if desired.
