For the Salad
1 cup cooked quinoa
Handful of asparagus
Small handful of fresh strawberries sliced
Small handful of fresh blackberries
2 tbsp feta, goats cheese or vegan friendly alternative, crumbled
Small handful of mixed greens, spinach, rocket etc.
6 - 8 Strong Roots Broccoli & Purple Carrot Bites
For the Dressing
1 tbsp honey or maple syrup
2 tbsp olive oil
2 tbsp apple cider vinegar
¼ tsp sea salt
¼ tsp black pepper
method (tick as you go)
Preheat your oven to 200C (400F). Put your Broccoli & Purple Carrot Bites on to cook for 13 to 15 minutes.
Whisk together all dressing ingredients and set to one side.
Create ribbons of asparagus using a vegetable peeler.
Use 1 -2 tbsp of the dressing to dress the quinoa, and another 1 -2 to dress the vegetable ribbons.
Layer up all salad ingredients, saving the cooked bites for on top and garnishing with cheese or non dairy alternative. Serve a little extra dressing on the side if desired.
